These rich and indulgent chocolate orange fondants are flavoured with orange and filled with segments of Terry's chocolate orange which will melt to guarantee a soft and oozy centre. Ingredients

  • 350 g

    dark chocolate (about 70%), broken into small pieces

  • 50 g

    unsalted butter, plus extra for greasing

  • 150 g

    caster sugar

  • 4

    large eggs, at room temperature

  • 1 tsp.

    vanilla extract

  • Zest of 2 oranges

  • 50 g

    plain flour

  • 6

    Terry's Chocolate Orange segments

  • Vanilla ice cream, to serve

Directions

  1. Grease six metal pudding moulds with butter. Draw around the base of these 6 times on a piece of greaseproof paper, cut each out and press into the base of each mould.
  2. Melt the dark chocolate in a heatproof bowl set over a pan of lightly simmering water, then set aside to cool slightly. In a large mixing bowl beat together the butter and sugar using a handheld electric mixer (or freestanding mixer) until well combined.
  3. Beat in the eggs one at a time then add the vanilla, orange zest and a pinch of salt. Fold through the flour.
  4. Half fill each pudding mould with the mixture then add a chocolate orange segment to each. Add the remaining chocolate mixture to cover the chocolate orange and smooth the surface. Chill in the fridge until firm, at least one hour or up to three days in advance.
  5. When you are ready to bake them, preheat your oven to 200°C (180°C Fan).
  6. Place the fondants onto a baking tray and bake for 12 minutes before carefully turning them out of their moulds into serving bowls. Serve with vanilla ice cream, if you like.
