The Oystermen announce new neighbourhood restaurant, Walter’s

Covent Garden duo Rob Hampton and Matt Lovell, best known for their Henrietta Street restaurant The Oystermen, are headed to west Dulwich for their next project.

The pair will open Walter’s — named for a milliner and costumier who first owned the site — in January of next year. They say it will be a relaxed offering, dubbing it simply a “neighbourhood restaurant and bar”.

Open for lunch and supper throughout the week, the menu will offer a modern take on familiar British dishes, going beyond seafood Hampton and Lovell have made their name with.

While there will be the likes of trout skin with a cod roe dip and truffle arancini, and a Bloody Mary crab salad, as well as roasted hake with a romesco sauce, diners will also be able to order the likes of roasted venison loin with parsnip, Jerusalem artichoke risotto, and an apricot and harissa-glazed lamb belly salad. Walter’s head chef will be Khalid Hassan, who has previously worked for Gordon Ramsay, Jason Atherton, Angela Hartnett and Joel Robuchon.

The new space is set to be fairly small one, seating just 50 and split into two: at the front will be the glass-fronted main dining room, all wooden floorboards and bare bricks, while at the back of the building will be a smaller lounge space. This will be, they say, darker and cosier, and set up for wine and cocktails into the late evening.

Of which, an antique bar is set to dominate the space, serving grower Champagnes, a large by-the-glass wine selection, an array of classic cocktails and a broad choice of whiskies.

Below both the bar and the restaurant space will be a wine cellar, where Hampton and Lovell hope to hold wine tastings, though it will also be available to hire as a private dining space.

The pair said of the opening: “We have had such a journey since opening The Oystermen, our first bricks and mortar site just over four years ago.

“Walter’s feels like a very natural next step for us, we are moving down south, to a  neighborhood we know and love. We can’t wait to create a spot for people to relax and enjoy great food at any time of day.”
