Lemon trifle is crowned Platinum Pudding for Queen’s Jubilee celebrations

The winner of the Platinum Pudding competition has said the experience was “surreal,” as she only decided to enter after a friend suggested the competition to her. Jemma Melvin’s lemon Swiss roll and amaretti trifle has beaten 5,000 desserts to be awarded the title of Platinum Pudding for the Queen’s Jubilee celebrations. The trifle, inspired by the 31-year-old copywriter’s Gran and Nan, will become part of British royal food history, following in the footsteps of the Coronation Chicken and Victoria Sponge.
