Scrumptious Appetizers To Serve At Your Next House Party

House parties and family dinners are those occasions where you put on your chef caps and make the delicacies that you are a ‘pro’ at. With different people coming, you need to keep a check that the food should be relished by everyone. While there are a variety of dishes to choose from, here we bring you some quick and easy appetizers that can very well be on your menu.

Sweet Potato Cutlet

Ingredients:

  • 1 ½ cups boiled and mashed sweet potatoes

  • ¼ cup finely coriander

  • 1 tsp chilli powder

  • ¼  tsp turmeric powder (Haldi)

  • 1 tsp chat

  • 2 tsp lemon juice

  • 1 ½ tbsp corn flour

  • 1 tbsp rice flour

  • salt to taste

  • oil for deep-frying

  • ½ tsp chat masala for sprinkling

 

Method:

  1. Combine all the ingredients in a bowl and mix well.

  2. Divide the mixture into equal portions and shape each portion into a round (2” diameter) flat culet.

  3. Heat the oil in a deep non-stick pan, and deep-fry the cutlets, on a medium flame till they turn golden brown in colour from all the sides. Drain on an absorbent paper.

  4. Sprinkle some chaat masala evenly over the cutlets.

  5. Serve immediately with green chutney or tomato ketchup.

Dahi Ke Kebab

Ingredients:

  • 2 cups hung curd/ yoghurt

  • 1 cup Paneer (crumbled)

  • ½ small finely chopped onion

  • 1-inch ginger (grated)

  • 1 finely chopped green chilli

  • 2 tbsp coriander leaves (finely chopped)

  • 2 tbsp dry fruits (cashews, almonds), chopped

  • salt to taste

  • ½ tsp pepper (crushed)

  • ¼ cup breadcrumbs

  • 2 tbsp corn flour, to dust patties

  • oil for deep frying

 

Method:

  1. Firstly, take curd and add 1 cup crumbled Paneer, onion, ginger, chilli, coriander leaves and dry fruits to it.

  2. Mix well and add salt, crushed pepper and breadcrumbs to the mixture to remove the excess moisture. (Do not over knead as curd will start releasing moisture.)

  3. Grease both the hands with oil and prepare a ball sized patties.

  4. Coat the patties with corn flour to remove excess moisture.

  5. Now deep fry the patties in hot oil, on medium flame, stirring occasionally.

  6. Fry till the patties or kebabs turn golden brown.

  7. Finally, serve the kebabs with pudina chutney. 

Corn Chaat

Ingredients:

  • 3 ½ cup corn kernels

  • 1 cup green and yellow bell pepper finely chopped 

  • ½ cup finely chopped tomato

  • 1 tsp salt

  • ½ tsp black salt (optional)

  • 1 tsp cumin seed

  • 1/4 tsp black pepper powder

  • 1/4 tsp red chilli powder

  • 1 tsp green chilli (finely chopped, adjust to taste)

  • 1 tbsp coriander (finely chopped)

  • 1 tbsp lemon juice

 

Method:

  • Coat the nonstick frying pan with oil or butter and heat over medium flame. Add corn kernels and bell peppers and stir-fry for 4-5 minutes stirring continuously. Some corn will start popping and they start getting some brown spots. Turn off the heat.

  • Once the corn is cooled down, add tomato, sprinkle black pepper powder salt, black salt, and chilli powder.

  • Add lemon juice and green chilli as per your taste. Mix it well. Garnish with sev or coriander.

Stuffed Capsicum

Ingredients:

  • 2 large capsicum (any colour)

  • 3-4 large potatoes (boiled, peeled and mashed)

  • ¾ cup grated Cheese (Parmesan or Cheddar)

  • 1 large onion (finely chopped)

  • 1 tsp red chilli flakes

  • 1 tbsp Corn flour

  • 1 tbsp freshly chopped coriander

  • Salt to taste

  • 1 tbsp butter

  • 4 tbsp Oil

 

Method:

  1. Heat 1 tsp oil in a small frying pan and onions until they turn golden brown.

  2. Add the onions to the potato mash along with red chilli flakes, chopped coriander, and salt to taste and mix well.

  3. Finally, add some chopped coriander leaves to the mixture. Mix all the ingredients well and set the mixture aside.

  4. Cut the top part of the capsicum and remove all the seeds. You can also cut some part from the bottom so that the capsicum can stay on a flat surface. Fill the hollowed capsicum with the stuffing and press lightly.

  5. Sprinkle some grated cheese on top. Prepare a baking tray by lightly brushing it with oil. Also, brush all the bell peppers with a little bit of oil. Bake at 200˚C till the capsicum is cooked and becomes soft. (You can also cook in a pan by covering it with a lid until the cheese starts to melt).

  6. Serve hot with a chilli mayo dip or even the spicy green chutney.

Matar Potli

Ingredients:

For dough-

  • 1/2 cup All-purpose flour

  • 2 tbsp Semolina / Rava

  • 4 tsp Oil

  • 1/2 tsp ajwain

  • Salt to taste

For Stuffing:

  • 2 cup green peas

  • ¼ cup Mashed potato

  • ½ Onion (finely chopped)

  • 4 Green chillies (finely chopped)

  • 1 tbsp Ginger paste

  • ½ tsp Cumin seeds

  • 1 tsp Cumin powder

  • ½ tsp Dry mango powder ½ tsp Garam masala

  • pinch of asafetida

  • ¼ tsp Turmeric powder

  • Salt to taste

 

Method:

  • Mix all ingredients and knead it into a dough. The dough should be bit stiff. Cover with plastic wrap and let it rest for 20 minutes.

  • For stuffing - Heat oil in a pan. Add cumin seeds, green chillies, and a pinch of asafetida.

  • Add chopped onion and sauté until translucent. Then add cumin powder, garam masala, turmeric powder and dry mango powder. Sauté for few seconds.

  • Add green peas and salt to taste. Cook till peas turn soft. Finally, add mashed potato and sugar. Mix well and cook for a minute. Switch off the heat and let the stuffing cool down.

  • Make potlis - Make equal sized balls with the dough. Take one ball and roll it like a thin puri. Place the filling in the centre of the puri and bring the edges together and form a pot shape. Pinch at the neck of potli to seal it or you can knot the neck of the potli with a strip of dough.​

  • Fry them nicely from all the sides till light brown colour. Serve hot with tomato ketchup or pudina or dhaniya chutney.
