Al Fresco - Picnic

A tasty mix of traditional foods—pork pie makes for a delicious picnic food, and it can be packed whole or ready-sliced, as can the panini. Sweet muffins are an easy sweet dish to pack and eat. Half of the food can be prepared the day before and kept chilled.


Day before

Make the spiced pork and chicken pie , leave to cool, then pack in a sealed container.

Bake the blueberry muffins , leave to cool, and pack in a sealed container.

2 hours

Prepare the hummus , cover and leave in the refrigerator.

1 hour

Make the chicken with aduki beans and parsley , put in a sealable container, and leave in the refrigerator.

30 minutes

Prepare the crayfish paninis , wrap individually in parchment paper, and tie with string.

Prepare the Chicken Caesar salad , and pack loosely in a sealable container (so you don’t crush the lettuce leaves).


Remove the chicken with aduki beans from the refrigerator, and transfer the hummus to a sealable container.

Pack forks, knives, napkins, and beverages.
