A super-quick, fresh menu that is low in fat and calories, but high in flavor. Both the starter and dessert can be prepared ahead of time and kept in the refrigerator, and you can use ready-cooked salmon for the main dish if you are short on time.


30 minutes


Prepare the fruit salad, cover, and put in the refrigerator.


Prepare the soup, ladle into serving bowls, and put in the refrigerator to chill.

20 minutes

Main course

Prepare the salsa verde and cucumber, and put in the refrigerator.

Main course

Arrange the cooked salmon on plates. Or, cook salmon fillets wrapped in foil in a medium oven for 20 minutes.

10 minutes

Main course

Remove the salsa verde and cucumber from the refrigerator, and spoon over the plates of salmon. Cover until ready to serve.


Prepare the garnish for the soup.


Garnish and serve the soup.

Remove the fruit salad from the refrigerator.
