A healthy menu for entertaining, that’s both delicious and quick—it’s perfectly acceptable for fish to appear twice on the menu. Not only is it ready to eat in an instant, it is also low in fat and good for you. The exotic dessert can be prepared ahead of time, leaving you free to keep your guests company.


Countdown

60 minutes

Starter

Prepare step 1 and step 3 of the starter, leaving out the apple. Cover and put in the refrigerator.


Dessert

Separate the oranges into segments for the dessert, and put to one side.


45 minutes

Preheat the oven.


Main course

Slice the zucchini for the main course (step 1).


Dessert

Prepare the dessert, arrange on a platter, and put in the refrigerator to chill.


30 minutes

Main course

Prepare the fish couscous, cover with foil, and put in the oven.


15 minutes

Starter

Remove the starter ingredients from the refrigerator, and add the apple to the beet.


Main course

Prepare a crisp green salad to serve with the main course, if desired.


Serve

Check on the couscous. If cooked, turn off the oven.

Serve the starter.

Remove the dessert from the refrigerator.
