Opened in 2002, and named after the locally born composer of The Marseillaise, this brewery develops up to 15 new beers each year, some of them using local ingredients instead of hops for their bitter notes.


Brewing secret

Among the ingredients used to replace hops are wormwood, dandelion, blackcurrant, and gentian.


Fourche du Diable

beer style: Lager
alcohol content: 5.4% ABV

Amber in color; aromas of spring flowers and an unusual bitter note contributed by gentian roots.


Abisinthe

beer style: Lager
alcohol content: 6% ABV

Golden and very refreshing, with aromas of mint, balm, and the special bitterness of wormwood.
