Uncooked freezer jams are a great solution for anyone who wants fresh-tasting, low-sugar spreads. Very ripe, juicy fruits, especially those low in acid that are difficult to set properly , are ideal as thickened purées.

Gelling agents

This method uses agar, a healthy, tasteless, Japanese gelling agent, made from seaweed, which is available in health food stores and some supermarkets. The agar gives these quick jams a jelly-like set; they can be used, thawed on toast, desserts, or yogurt.
