Summer

This is an easy menu, ideal for serving four or more people al fresco. All three dishes can be made the day before. The main dish is much lighter than most meat dishes, and can be served alongside a fresh green salad.


Countdown

Day before

Starter

Prepare the arancini, cover, and chill.


Dessert

Make the mousses, cover, and chill.


Main course

Make the pastry for the pie, and chill (step 1).


2 hours

Main course

Roll the pastry out, and line the tin. Chill. Make up the sausage meat mixture (step 2).


1 hour

Main course

Assemble the pie and put in the oven to bake (step 3).


Main course

Prepare a salad to accompany the pie.


Serve

Arrange the arancini on serving plates, and garnish.

Check on the tart.
