Riccardo Franzosi, who left a secure job in the family construction firm to assemble his own beers, is one of the most eclectic brewers in Italy. He brews a wide range of regular and seasonal ales, using local products—cherries, peaches, and blueberries.

Brewing secret

The coriander he uses comes from his neighbour’s garden.

Dolii Raptor

beer style: Strong Ale
alcohol content: 8.5% ABV

Matured in Barbera wine barrels for over six months, then re-fermented with white wine yeasts.

Quarta Runa

beer style: Sour Peach Ale
alcohol content: 7% ABV

Volpedo peaches are heated in an oven before fermentation for extra “peachiness.” The sourness comes from wild yeasts on the peach skins.
