Focusing on Belgian-inspired beers, Allagash draws on tradition but does not shy away from innovation. In 2007 it became the first American brewery to build a traditional “coolship” (a huge, open, shallow pan) for spontaneous fermentation by wild yeasts.

Brewing secret

Some specialty beers are aged in oak bourbon barrels.

Allagash White

beer style: Witbier
alcohol content: 6.2% ABV

Appropriately cloudy, fruity, and refreshing. Brightened by subtle coriander and Curaçao orange peel.

alcohol content: 10% ABV

Allagash Tripel ale, aged in Jim Beam barrels. Orchard fruits and honey meet bourbon, vanilla, and wood.
