In rolling out its new Union Jack IPA at the start of 2008, Firestone Walker Brewing Company intensified its focus on pale ales. Each one includes a portion of beer fermented in the patented Firestone Union barrel system, which takes inspiration from the historic Burton Union method originated in Burton-on-Trent, England. Firestone also blends wood-fermented beer with beer from stainless steel to fashion each of its ales. To celebrate recent anniversaries, the brewers created several strong ales aged in a variety of bourbon, brandy, and untreated oak barrels, then blended them into a single release, using input from regional winemakers.

Double Barrel Ale

alcohol content: 5% ABV

Contains 15–20 percent oaked beer. Spicy, rounded fermentation-based fruit, vanilla, and a woody rich-but-not-sweet texture.

Pale 31

beer style: California Pale Ale
alcohol content: 4.6% ABV

About three percent oaked beer. Bright and citrussy aromas, with layers of fruit and malt on the palate.

Union Jack IPA

beer style: India Pale Ale
alcohol content: 7.5% ABV

Juicy hops arrive in waves of citrus, grapefruit, pine, and mangoes, complementing a solid malt base. Oak and bitterness work in tandem.

Firestone 11

beer style: Strong Ale
alcohol content: 11% ABV

Rich, with dozens of flavors held together by its texture, shifting from silky to nicely coarse at the end.
