A South Australian baker accused of flying to Queensland and using a butcher's knife to stab a woman he was infatuated with as she shielded her baby is being allowed to return home.

Jason Wayne Greatbatch, 36, is charged with attempting to murder a 21-year-old woman and her 10-month-old son at a Kuttabul home near Mackay in December 2015.

Greatbatch was granted bail in the Brisbane Supreme Court on Wednesday under strict conditions including that he must live with his parents and be monitored by a GPS tracker while he awaits trial.

The court heard Greatbatch became infatuated with the woman when she was a teenager working at his Ceduna bakery and continued to have regular contact with her after she moved to NSW.

Greatbatch allegedly hired private investigators to locate the woman after she went to Queensland in 2014 with her partner but eventually found her address when her mother-in-law posted a picture to Facebook.

He then flew to Mackay on December 27 last year and drove to the isolated property in the middle of the night.

Greatbatch allegedly stabbed the woman's partner in the chest and directed a large butcher's knife at her mother-in-law when they tried to stop him getting inside the house.

The court heard Greatbatch allegedly stabbed the woman in the breast and shoulder as she tried to shield the baby.

She lost two-thirds of her blood and was not expected to survive the alleged attack.

The next day Greatbatch flew back to Adelaide Airport where he was arrested by police.

Greatbatch's lawyer Paul Davis said his client, who is also charged with stalking, burglary and harming the partner, should be released because he was waiting a long time to stand trial.

Greatbatch's parents have also provided $10,000 cash deposit and a $300,000 surety to ensure his release from custody, where he has been assaulted a number of times including while in protection.
