A woman, who allegedly threw a hatchet at police during a high-speed car chase from NSW's Southern Highlands to Sydney, has been granted conditional bail.

Kristy Winslett, 38, was allegedly the passenger in a stolen car that led police on a chase from Mittagong to Merrylands, and ended when the pair fled on foot and were captured.

During the pursuit, which allegedly reached speeds of 180km/h, items were thrown from the car, and a policeman standing beside his car was nearly hit by the fleeing vehicle, police said.

Winslett's co-accused, Hadi Taee, 33, did not apply for bail and it was formally refused at Parramatta Bail Court on Sunday.

The pair are set to face Parramatta Local Court on January 17.
