Our Favorite November Weeknight Dinner Recipes

By Camille Lowder of Delish | Slide 1 of 41: Is it just us, or does anyone else feel like now that Halloween is over, it’s pretty much go-time from now until January? There’s so little time and SO much to do to gear up for a wonderful holiday season, but November is the last month that really feels like fall, so we’re not letting it get away without celebrating all it has to offer. Join us this November as we say goodbye to autumn produce and hello to the winter holiday season (Christmas music has already started playing 😫) through cozy, comforting meals for both weeknights and special occasions. We’ve got 40 recipes to help inspire you to make dinner this November—one for every day of the month, and then some. We’ve included a good mix of entirely new recipes, like our cheesy chorizo, chickpea, & crispy rice skillet, our Instant Pot pork puttanesca, or our French onion meatball sub, as well as some old classics, like our white chicken chili, our Mississippi roast (if you’re unfamiliar, get excited—it’s a flavor bomb), and our Mexican beef 'n' rice skillet. Is it just us, or does pumpkin get a little less alluring come December? If you feel the same, get ALL your squash in now with our creamy pumpkin & Parmesan chicken skillet, our pumpkin tomato soup & grilled Swiss cheese sticks, or our baked pumpkin risotto. They all taste like fall in a bowl. We’re also taking inspiration from everything going on in November, like Thanksgiving, of course, but also Dia de los Muertos and sports parties. We’ve included a few new tailgate classics here, like our Buffalo chicken & rice casserole and our football field dip, but take this as permission to turn any apps into dinner while you’re watching the game. If you’re celebrating the Day of the Dead this year, try making tamales, bean & cheese taquitos, or our green chile chicken skillet enchiladas to share with your friends and family. Rather than include all our top Thanksgiving dinner ideas here (and believe us, we’ve got a ton), we’ve focused instead on what to do with all those leftovers. Fill the week after Thanksgiving with meals like our Thanksgiving sandwich, our Thanksgiving crunch wrap, or our turkey enchiladas so nothing goes to waste.
