Is there anything better than a big, still-warm-from-the-oven, chocolate chip cookie? They’re a classic for a reason and are a staple at backyard parties, holiday dinners and, of course, bake sale tables.

But if you’re one of those last-minute bakers like me (these 15-minute recipes have been my saving grace) baking up a few batches to feed a crowd can become time-consuming.

Luckily, Rhonda Knight of Hecker, Illinois has the perfect solution: Chocolate chip cookie bars! All the comforting flavors and texture of a chocolate chip cookie with the convenience of tossing the dough in a 13x9 and baking all at once. Plus, the bars can be cut to any size, making them a great option for potlucks and bake sales.

How to Make Chocolate Chip Cookie Bars

Ingredients:

  • 1-1/2 cups packed brown sugar
  • 1/2 cup butter, melted
  • 2 large eggs, lightly beaten, room temperature
  • 1 teaspoon vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (6 ounces) semisweet chocolate chips (We love 365 Everyday Value’s chips)

Step 1: Prepare the batter

First, preheat your oven to 350°F.

In a large bowl, mix the brown sugar, butter, eggs and vanilla until they’re just combined. You don’t want to over mix them, so it’s okay if there are still a few lumps of butter or brown sugar here and there.

In a separate bowl, combine the flour, baking soda and salt. Then, mix the dry ingredients into the wet until a thick, brownie-like batter forms. Fold in the chocolate chips until they’re evenly distributed throughout the batter.

Step 2: Bake

Grease a 13x9-inch baking pan with either butter or shortening. This is the difference between the two, by the way.

Spread the batter in the pan then pop it into the preheated oven. Bake the bars for 18-20 minutes or until a toothpick inserted in the middle comes out clean.

Step 3: Cool and cut

Pull the baked bars out of the oven and allow them to cool completely on a wire rack. Once cool, cut the bars and serve. If you want to add an extra-level of decadence, serve the chocolate chip cookie bars with a scoop of vanilla ice cream and a drizzle of hot fudge for an indulgent sundae.
