The Secret To Grilling Perfect Burgers That No One Tells You

Burgers and hot dogs seem like the no-brainers to throw on the grill during summer picnics and barbecues, but burgers are actually ... kinda easy to mess up. They can be overcooked, underdone, or straight-up dry if the grill master doesn't pay attention. Here are the three secrets to perfect patties every time.

1. Flex your thumbprint.

Nope, it's not an old wives tale that pressing a thumbprint indent into your burger patty is important. Don't skip this step! As the meat cooks, the patty shrinks, so this will help it keep its shape and ensure even cooking.

2. Get your grill HOT.

You don't want your burger patties even touching the grill grates until they're smokin' hot (slow-cooked burgers = no thanks). Heat your grill to high and bust out the oil-you'll need it for your brushing on your grill grates and your patties directly to prevent sticking and add another layer of flavor.

3. Follow the 3-minute rule.

For medium-rare burgers, cook for 3 minutes, then flip and cook 3 minutes more before topping with cheese and covering the grill to let it melt. (Not using cheese? Cook for 4 minutes after the flip.)
