Here's what Aaron Franklin, ownerof Austin's popular restaurantFranklin Barbecue, has to say: Salt draws the moisture out ofsteak, but this is a good thingif you get the timing right. The extracted water dissolvesthe salt, creating what Franklincalls a "mini brine." That salty liquid starts to getreabsorbed back into the meatafter about 15 to 20 minutes. Ideally, let the meat restanywhere from 4 to 48 hours. If you can't let it rest for hours,at least let it rest for 30 minutes. When the meat is cooked to yourpreferred doneness and sliced, addan extra sprinkle of flaky salt on top.
