The Company is a growing, moderately priced, full-service, casual dining restaurant chain. It operates approximately 420 restaurants in 48 states...more and three foreign countries. The Company’s mission statement is ‘Legendary Food, Legendary Service.’ It is a full-service, casual dining restaurant chain. It offers an assortment of specially seasoned and aged steaks hand-cut daily on the premises and cooked to order over open gas-fired grills. In addition to steaks, it also offers its guests a selection of ribs, fish, seafood, chicken, pork chops, pulled pork and vegetable plates, and an assortment of hamburgers, salads and sandwiches. The majority of its entries include two made-from-scratch side items, and it offers ...moreall its guests a free unlimited supply of roasted in-shell peanuts and made-from-scratch yeast rolls. It places emphasis on ensuring its guests receive quality and freshly prepared food. As part of its process, it has developed proprietary recipes to provide consistency in quality and taste throughout all restaurants. It offers a performance-based compensation program to its individual restaurant managers and multi-restaurant supervisors, who are called ‘managing partners’ and ‘market partners,’ respectively. It offers its food and beverages at moderate price points that are as low as or lower than those offered by many of its competitors. It designs its restaurant prototypes to provide a relaxed atmosphere for its guests, while also focusing on restaurant-level returns over time. The Company’s current prototypical restaurants consist of a freestanding building with approximately 6,700 to 7,500 square feet of space constructed on sites of approximately 1.7 to 2.0 acres or retail pad sites, with seating of approximately 57 to 68 tables for a total of 245 to 291 guests, including 15 bar seats, and parking for approximately 160 vehicles either on-site or in combination with some form of off-site cross parking arrangement. The Company’s current prototypes are adaptable to in-line and end cap locations such as spaces within an enclosed mall or a shopping center. The Company’s dinner entries prices generally range from $8.99 to $24.99, with about 15 entrées priced under $10.00. It offers a broad assortment of specially seasoned and aged steaks, including 6, 8, 11 and 16 oz. Sirloins; 10, 12, 16 and 20 oz. Rib-eyes; 6 and 8 oz. Filets; Prime Rib; and T-Bones, almost all of which are hand-cut daily on the premises and cooked over open gas-fired grills. It also offers its guests a selection of fish, seafood, chicken, pork chops, ribs, pulled pork and vegetable plates, and an assortment of hamburgers, salads and sandwiches.
