Freezing - Freezing Uncooked Fruit

A perfect way to preserve the flavor and nutritional content of fresh fruit is to freeze it. Freezing breaks down the cell walls of fruit, so whole fruit will be squishy when thawed—but the flavor will be just as delicious as fresh.


Freezing purées

Very juicy fruits such as peaches, raspberries, and strawberries can be puréed uncooked in a food mill or food processor with a little sugar and lemon juice and frozen in containers (leave 3/4in /2cm of space at the top to allow for expansion). Serve over ice cream, as fruit coulis, or mixed with yogurt and cream for instant fruit fools. Uncooked purées keep frozen for 6 months.

Overripe fruit, or fruit not perfect enough to freeze uncooked, can be stewed lightly, baked, or poached in a sugar syrup with added flavorings or a wine-based syrup . Freeze cooked fruit (leave 3/4in /2cm of space at the top of each container to allow for expansion) for up to 9 months.
