Such as phytic acid or phytate, which decreases the absorption of minerals such as iron and zinc; protease inhibitors (trypsin inhibitor), proteins that inhibit the function of various digestive enzymes, impairing protein digestion; starch blockers (alpha-amylase inhibitors), substances that impair the absorption of carbohydrates by the digestive tract. What can be totally or partially avoided when the beans are properly soaked in water for at least 10 hours and properly cooked.Beans can increase gas production, as it is a fermentative food, so people who have cramps and abdominal distension after eating beans are not allergic to this food, the symptoms are usually due to the phenolic compounds it has, due to these compounds to be released in the water, it is advised that the beans should be soaked around 10 hours and the water be changed before cooking it. If you feel any symptoms different from those described above after consumption, consult a specialist.→ See benefits of Kidney beans from this expert→ Love Kidney beans?
