Burger, Craft Bar & Brew Fave 'Eureka!' Expands In SD County

CARLSBAD, CA – Eureka!, an upscale, burger-and-bar restaurant chain, is expanding its San Diego County presence with its newest location set to debut April 29 in Bressi Ranch in Carlsbad.

The Hawthorne-based, relaxed-vibe eatery is committed to using locally sourced products in its "scratch kitchen," and featuring an elevated collection of local craft beers, small-batch whiskeys and classic cocktails.

“We strive to create an energetic environment, where guests can discover their new favorite style of burger or unique small-batch whiskey, while supporting the local community through our beverage program, featuring the best breweries and distilleries in California," said Chief Discovery Officer Paul Frederick.

The Carlsbad Eureka!, set to be among the LIFT businesses at 6021 Innovation Way, will seat 184 guests with an interior and patio at nearly 5,000 square feet total that includes a fireplace outdoor table. The dining room's center focus will be a bar surrounded by handmade, lava-stone tiles with a green-glaze finish and a mural by local artist Kris Markovich.

On the menu will be such American classics with modern twists as all-natural, Angus chuck burgers, salads, Mac N’ Cheese Balls made with beer cheese sauce and Fresno chiles, a Bone Marrow Burger featuring shiitake, bone-marrow butter, charbroiled onion, mustard aioli and roasted Roma tomato, a Fresno Fig Burger topped with fig marmalade, melted goat cheese, bacon, tomato, red onion, arugula and spicy porter mustard, and Bourbon Barrel Cake finished with pecans, caramel and paired with vanilla bean ice cream.

Weekend brunch offerings on Saturdays and Sundays will include $5 Mimosas and Bloody Marys, Chilaquiles with ranchero tortilla chips, feta, sour cream, purple onions, avocado, pico de gallo, topped with two eggs and Fried Chicken & Sweet Cornbread topped with whipped butter, jalapeño-infused maple glaze and bacon.

Eureka!'s commitment to serving all-American, premium products "with no crap on tap" means patrons can select from 30 local craft beers or the signature cocktail program with such guest favorites as the "Wild Child" with vodka, watermelon, mint, lemon, aloe, rosé and habanero salt and the "Eureka! Punch," a tropical, pineapple punch featuring a secret three-day crafting process.

Additionally, there are 40-plus, small-batch whiskeys and a special off-menu selection featuring various hard-to-get and strictly allocated whiskeys like Pappy Van Winkle and offerings from the Buffalo Trace Antique Collection, available to the most discerning whiskey drinkers.

The restaurant’s hours will be Mondays through Wednesdays from 11 a.m. until 11 p.m., Thursdays to Fridays from 11 a.m. to midnight., Saturdays from 10 a.m. to midnight and Sundays from 10 a.m. to 11 p.m., along with daily “hoppy” hours, weekend brunches from 10 a.m. to 2 p.m. and live music on Thursdays.
