Serves 4 | Prep time: 5 minutes | Cook time: 20 minutes

Ingredients:

  • 1 cup shredded part-skim low-moisture mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 2 fresh jalapeño peppers, seeded and sliced

Directions:

  1. Preheat the oven to 375° F.
  2. Line a baking sheet with parchment paper or a silicone mat.
  3. Combine the mozzarella, Parmesan, and eggs in a bowl and mix until fully combined. Spoon the mixture onto the prepared baking sheet in 4 portions. Top each with slices of jalapeño.
  4. Bake for 15 to 20 minutes, until the cheese has fully melted and the bread begins to brown.
  5. Let cool for 5 minutes and serve.
