A counterintuitive exception to this is sushi and other raw fish preparations: The Food and Drug Administration requires that any wild-caught fish served raw -- except varieties of tuna -- be frozen before serving, to kill parasites. Assuming that it's frozen correctly, such fish will still be "fresh" when it's thawed, even on a Sunday or Monday.
