Pumpkin Spice Latte Bread Recipe: Cooking With Courtney

Nine times out of ten, you’ll catch me brewing my coffee pour-over-style with no sugar or cream. But when fall comes, I just can’t help myself. Yeah baby, it’s pumpkin spice latte season.
Actually, it’s all-pumpkin-everything season. Fall is just my favorite. It’s when we get to break out the flannels, celebrate Thanksgiving (an entire holiday dedicated to food!), have cheesy pumpkin patch photoshoots with family and friends — and of course — bake pumpkin bread.
I love me some spiced pumpkin bread. Taking a cue from the classic PSL, I topped this loaf with a super simple, three-ingredient coffee glaze and added just a hint of coffee in the batter. The warmth of the spices, brown sugar and coffee… It is ultra-comforting.

While I love the coffee glaze, it is optional. This bread holds its own, no glaze necessary. Still delicious and perfect for folks who like treats on the less-sweet side. I’ve included a photo of the glaze-less pumpkin bread in the slideshow above so you can see how that looks too.

This pumpkin bread requires no yeast. No fancy tools. You don’t even need a coffee maker, since this recipe uses instant coffee.
So bust out the fuzzy socks, put on a cozy sweater, light a candle and get in the fall spirit. It’s time for pumpkin bread!
For the pumpkin bread:
- canned pumpkin puree
- flour
- brown sugar
- eggs
- vegetable oil or other neutral-flavored oil
- butter
- baking soda
- instant coffee
- pumpkin pie spice
- vanilla
- salt
- optional: pumpkin seeds for garnish
For the glaze:
- butter
- instant coffee
- powdered sugar
